Madu Batu also known as Rock Honey is harvested right of the caves of Northern Kelantan. Rock Honey is difficult to harvest as our harvesters have to hang from ropes in order to harvest the hives off these dangerous cave walls. The bees that form the hives along these cave walls are called Apis Dorsata.

 

Apis Dorsata are big bees that form their hives at high places. Besides from forming their hives at caves, they do also form their hives on the tall Tualang trees. The Rock Honey is from the caves while the Tualang honey is from the Tualang trees but both are produced from the same species of bees i.e. Apis Dorsata. Rich in texture, the rock honey is non-runny in nature, being more leaned towards a jelly like substance, hence gaining the name “Madu Batu”.

 

The reason being for the jelly like state of the honey is due to the high density of honey and the low level of moisture, often due to the bees fanning their wings, hence evaporating water content. This honey is poly floral which is high in nutrient benefits. It is believed to have rich medicinal values similar to Tualang honey coming from the family of Apis Dorsata bees.

• Honey crystallization is a natural process of preserving itself. To liquefy the honey, place the jar in warm water. Hot water may eradicate the nutrients in the honey.
